If sausage isn’t one of your favorite foods, you must be a vegetarian. Seriously, sausage makes almost every dish better – eggs, pasta, casserole, soup, even fruit (try it).
The problem is, most of it is not healthy. Between the unpronounceable ingredients and the questionable quality of pork, for most omnivores, sausage is a guilty pleasure.
However, my family found a way to eat it guilt-free. We take all that shame and shove it deep down into the pit of our stomach while reaching for more sausage.
While I don’t recommend dealing with your feelings that way, I do recommend trying this recipe.
It uses 5 ingredients you probably already have at home. You can use any kind of ground meat – chicken, turkey, beef, etc. I make it with the grass-fed beef we buy for a deal from a local farmer. And it’s versatile. Make it into crumbled sausage to use in scrambled eggs, Egg Muffins, frittata, etc. Or make it into patties and eat it as a side dish for breakfast. Either way, you have frugal, clean sausage – words you don’t often see in the same sentence.
Cost
Of course, cost always depends on what your ingredients cost you. If I make this with ground turkey from my local Aldi, it costs about: $1.99 per pound
If I use local, grass-fed beef, it costs about: $5.10 per pound
We use this sparingly, so it stretches across several meals for our family of 5.

5-Ingredient Homemade Sausage
Sausage makes everything taste better – and this easy recipe turns inexpensive ground meat into savory sausage with 5 ingredients you probably already have. Gluten-free and sugar-free too!

Ingredients
- 1 lb ground beef, turkey, or chicken
- 2 tbsp ground sage
- 1/2-1 tsp crushed red pepper, (this is spicy - start with 1/2 tsp)
- 1 tsp salt
- 1/4 tsp pepper, (optional)
Instructions
For Crumbled, Browned Sausage:
- In a medium size frying pan, begin browning the meat over medium heat. Sprinkle in seasonings, and stir thoroughly while the meat cooks.
- When meat is thoroughly cooked and no longer pink, serve as desired.
For Sausage Patties:
- Stir the meat and seasonings together thoroughly in a bowl. Roll heaping tablespoonfuls of meat into balls, like you're making meatballs. Gently flatten the balls until they are about 1/2-3/4-inch thick.
- Heat a frying pan over medium heat. If using chicken or turkey, melt a tablespoon of fat in the pan to prevent sticking. Place the patties in the pan, careful not to over crowd them. Cook for about 4 minutes, then use a spatula to gently flip them over. Cook for an additional 4 minutes, until patties are no longer pink inside.
- Transfer to a plate lined with a paper towel, then serve.
Optional:
- For both methods, you can stir the meat and seasonings together the night before.
- Cover and refrigerate, letting the flavors meld overnight.
Notes
This recipe makes easy, inexpensive sausage. However, you can enhance it by adding an egg white to the patties (to make them stick better), or a few additional seasonings.
